Shrimp Ceviche

INGREDIENTS

  • 1lb raw shrimp, peeled and deveined
  • 12oz Mexico Calling Lager Especial beer
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1-2 chopped serrano chiles, to taste
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped white onion
  • 1 avocado, chopped
  • 4-5 limes (for juice)
  • Salt, to taste
  • Tortilla chips or saltine crackers
  • Hot sauce, we like Tabasco

INSTRUCTIONS

  1. In a small pot, bring the beer to a simmer. Add a pinch of salt.
  2. Squeeze the juice of 1 lime into the simmering beer and then add the shrimp. Cook the shrimp until they are opaque and fully cooked, being careful not to overcook them. Once cooked, remove from heat, cool, and chop into pieces approximately 1/4-inch in size.
  3. Place the chopped shrimp in a mixing bowl. Add the diced tomatoes, onion, cilantro, serrano chile, cucumber, and avocado. Stir gently to combine.
  4. Season with lime juice and salt according to taste. Adjust the seasoning as necessary for your preferred balance of flavors before serving.
  5. Serve with your favorite tortilla chips, saltines, and a dash of hot sauce on each bite.
