This summer, grill up some Carne Asada Tacos marinated in our robust Mexico Calling Lager Especial. Juicy, tender, and infused with rich, robust flavors, these tacos promise to be the star of your fiesta.
INGREDIENTS
(makes 20 tacos)
- 2lb skirt steak
- 4 ancho chiles, de-stemmed
- 12oz of Mexico Calling Lager Especial beer
- 1/4 cup vegetable oil
- 1/4 cup apple cider vinegar
- 1/2 white onion, peeled and roughly chopped
- 3 cloves garlic, peeled
- 1 teaspoon ground black pepper
- 1 teaspoon ground cinnamon
- 1 teaspoon oregano
- 1/2 teaspoon ground cumin
- Salt, to taste
- Corn tortillas
- Lime wedges
- Cilantro and white onion, chopped
- Sliced avocado
INSTRUCTIONS
- Combine the ancho chiles, Mexico Calling beer, vegetable oil, apple cider vinegar, onion, garlic, black pepper, cinnamon, oregano, cumin, and salt in a blender. Blend until smooth to create the adobo marinade.
- Strain the marinade through a medium mesh strainer for a smoother consistency.
- Place the skirt steak in a large, shallow dish or a resealable plastic bag. Pour the marinade over the steak, making sure it’s well-coated. Seal or cover, and marinate in the refrigerator for at least 4 hours, preferably overnight, to allow the flavors to penetrate.
- Preheat a grill to high heat. Remove the steak from the marinade, letting excess drip off. Grill the steak to your desired level of doneness, about 3-5 minutes per side for medium-rare, depending on the thickness of the steak.
- Let the steak rest for a few minutes before slicing against the grain into thin strips. Serve as desired, perhaps with corn tortillas, lime wedges, fresh cilantro and onion, or avocado.
